Expect a couple of failures, until you get the hang of it.
It is worth going back to the machine at the end of the kneading phase to check the consistency of the dough. It should be tacky but not wet. If it is wet add a tablespoon of flour. It it is dry, add a tablespoon of water.
Measure your ingredients carefully and make notes of what you did, until you find the balance that works.

My Machine makes 1lb or 1.5 pound loaves. Takes just under 4 hours. Basically add ingredients and walk away.
Cleaning takes just a few moments. You remove the bake tin, and clean that and the dough hook, which sits at the bottom of the loaf and needs to be pulled out.

I went to Dali.

Breakfasts were all at Bakery 88. Excellent, and at under 30rmb for two eggs, two bacon, tomato, fresh bread, butter and jam, and a small fruit salad, plus drink (coffee/tea/juice), good value. The big plus for me was they are ready to serve at 8am.
There is also an excellent view of the mountain from the upstairs room. Nice ambience.

I didn't get as far as Bad Monkey, although they do have a proper sausage.

I bought mine second hand. Non descript brand. My brother has had a couple and swears by the cheapest one he bought.

Success or failure is in the recipe, and this will need tweaking to meet your taste, and the type of yeast. The only critical seems to be the balance of water. Too much and the bread over rises and then collapses leaving a big crater.
500 seems a little high, but then again it is dual purpose. A separate yog machine would cost about 60-70.

Mantou improver is a Chinese thing and the words 'mantou improver' are written in English on the bag. I have stopped using this, as it contains soda, which makes the bread a bit dry and crumbly. I now use a teaspoon of lemon juice to acidify the mix, and improve the yeast action.

They have baking soda in Metro, but only in wraps of 3 boxes. I think I may have seen it in Paul's Shop as well, and I saw baking powder (not soda) in Carrefour once.
Vanilla extract, I have not seen.

Someone once mentioned a baking shop near WangFuJin, not sure if it is still there though.

Blobbles, if there are not trees, you may be able to make out farmers routes on Google Earth. You can sometimes.

If you have personal GPS you could also check progress by pre-defining lat-long from Google Earth before you leave home and write them on a print out.

This has moved.
The cut flowers are about 700m east on Duonan Jie. The plants and trees are about 700 m west and follow Duocai Section.



A reasonable choice of lumber that has improved over time. Fancy hardwoods like walnut, and mahogany are in abundance. There are some plywood and rubber-wood boards available. There are also some kiln dried imported softwoods and merbao available. Some of the lumber is very green, so look for the kiln dried if you need stable timbers.



Echo everything said by others.
Breakfast great and the serve from 8am. Most other places say 9am and they still are not ready.
Sandwiches are cheap 22-32, and really packed full of filling. We got some sandwiches for a day out, the only mistake I made was ordering two, as this was too much. These are seriously good sangars, and they are wrapped in alu foil.



In fairness to Metro, they are a wholesalers, and not really a supermarket. Hence the need for a card, which can be got around.

They have improved in the year I have been away. They now carry a more consistent range of imported foodstuffs and they also seem to have sorted out the mported milk supply.

They have a wider range of electrical appliances now, there is a coice of more than one toast. There is also a better range of seasonal non foods, like clothes, shoes, garden furniture and camping gear.
