Xiang Sheng Ke www.gokunming.com/en/listings/item/xia_303/ is an upmarket, but reasonably-priced hotpot place. they have a handful of branches in the city; this link is for the Green Lake area one. it has buffet (a water carousel) hotpot on the first (ground) floor and regular paper-and-pencil stylee on the other three floors.

there are "non-standard" hotpot restaurants too - there's a place specialising in fish hotpot at Xiaoximen, and i hear word of a tasty chicken hotpot place on Dianmian Dadao.

There's a great place called Gun Guo Niu Rou a block down from Nan Ping Road behind the Parksons department store at Jin Ma Bi Ji Fang. I recommend their specialty beef and cow penis.
