I think they also require the university diploma, so that would have to be more than 2 years old to allow time for the "experience" to have happened.

Yes, you need two years of work experience in any field. This makes sense, as how can a Foreign Expert be an expert on anything with no work experience.
I think the checking could only be limited, but unless you graduated more than two years ago, then it would be impossible. The only exception I could think of would be someone who went to work after high school and held a position of responsibility before returning to college. I don't think they include part time work whilst at college. They would be looking for graduate level work.

Point to note. In the last two years, Kunming has become more assertive in refusing visas.

You can only try. It depends on the Public Security Bureaux (PSB), as to whether or not they will accept your work experience.
If your employer is doing the job properly, they will process all the documents for you, and then post them to you, so that you can apply for a work visa in your home country. It is they who will deal with the PSB. They will either get the paperwork (approved) or not.

Important. If the employer tells you to come over on a tourist visa, and they will sort out the paperwork when you arrive, beware. Firstly, this is technically illegal and the PSB are getting very tough on people bending the rules. Secondly, as there is already a question mark about your work experience, double jeopardy, you risk coming to China on a false hope.

To Chinese minds, appearance & quantity is everything, actual content/quality is rarely important. You will also need to get a background & health check done in your home country.
